Bruschetta

Makes four servings (two slices each)
Time about 1 hour, largely UN-attended!

About 8 plum tomatoes or 3 large tomatoes.
2 cloves of garlic minced
2 tbsp (25ml) chopped red onion
2 tbsp (25ml) chopped fresh basil
1/2 (2ml) tsp dried oregano
3 tbsp (amyl) good quality olive oil
Salt & pepper to taste
Feta cheese *optional
Fresh pesto *optional
8 thick slices of crusty Italian bread.
*also works great on flat bread, or homemade pizza crust.

1. Cut tomatoes in half; squeeze out seeds and juice.  Chop finely; you should have about 2 cups (500 ml)

2. Combine with garlic, onion, basil, oregano and 1 tbsn (15ml) of the olive oil.  Season generously with salt & pepper to taste.  Let stand at room temperature for about 1 hour; drain off liquid.

3. Toast bread under broiler (or on the barbecue) until golden on both sides.  Quickly brush one side of hot bread slices with remaining olive oil.

4. Spoon tomato mixture on top. 
Serve immediately.

    The time is 1916. Sara is a 10 year old girl in rural Prince Edward Island. Roy is a 10 year old boy in mining town, Nova Scotia. Through their eyes we see, feel and experience their childhood challenges. We follow them through adolescence and their turbulent teen years. We celebrate their courtship and suffer their lost innocence in the wedding ritual. They take us through the Great Depression and share with us the frustrations, dreams and challenges they face in adulthood. As parents they introduce us to their children. This story appeals to all ages because Sara and Roy hold up a mirror and ask the reader to recognize truth about the human condition for many Canadian families through difficult economic times. We witness love that does not come neatly wrapped and experience the quiet, sometimes desperate, drama of lives unfolding.

Short Story: Deadly Legacy:

       Filled with fear, I am starting to feel panicky and sick to my stomach. In my head, I yell and scream. “Help! Help! Help me! I’m trapped down here! Help me!” I know it is of no avail; it’s hopeless. If she buried me like she promised, there’s not a soul anywhere around up there that could help me. Besides, now my mouth is covered with duct tape forcing me to breathe through my nose. 

       My yelling and screaming is mumbled. I want to bang and scratch on the lid of my coffin, but I’m bound by the rug and cannot use my arms or hands. There is no help for me. The panic and fear overwhelm me and I pass out once more.

       Some time later, when I reawaken, something has happened, I am strangely calm and peaceful. I have no desire to struggle or yell. I understand I must relax, stay still and focus on the words and pictures. “What words and pictures?” I ask myself. 

       “The ones in your head that depict everything that ever happened in your whole life... You do know that just before someone dies, their whole life flashes in front of their eyes, reminding them of all the good and bad things which occurred in their lifetime.” 

       It’s a voice from the past, the long distant past. Thirty years, give or take a few either way. It’s a kind, loving voice that belongs to someone who cared, and still cares…Gran.

     Writing this has made me recognize that you don’t have to be King of the Castle to reap the rewards of friendship, love and all happiness. I would bet that you have a lot to be happy about, too. And writing your story could be one of the best gifts to the future generations of your family that you could ever leave behind. Simple life can have such a pile of treasure built up over the years as would make the crustiest pirate jealous. And writing your story may be, as is mine, an effort to say thank you.  . .

Emotional Healing through Meditation,
the Chakras and Psychospiritual Therapy

     As a Psychospiritual Therapist and co-owner of Creative Connections Centre in Caledon East, it was my privilege and pleasure, in addition to carrying on a private counseling practice, to facilitate meditation and other personal growth classes in our “One Room Schoolhouse”.

     It was not uncommon for an interested student to attend his first introductory meditation class with no prior knowledge of meditation or of the chakra system. For this reason I found it beneficial and in the highest interest of all concerned to keep it simple.

     Simplicity in meditation, as in life, is an admirable goal. My students and I recognized as classes proceeded that it was not always easy to be simple. Life, with its myriad of challenges, has a habit of doing its best to get in the way. Nevertheless we kept our focus on this goal and felt grateful when it was achieved.

     By special request of some of our Centre’s students I put together some rough notes and this teaching material was utilized in class.

     Since offering the Meditation Circles at Holy Trinity United Church and also the Emotional Healing Classes through Learning in Retirement in Elliot Lake, I have received requests for a book on the topic of self-discovery and personal growth. These requests have encouraged me to get to work and expand on my earlier rough notes to create this book: Keeping it Simple

     It is my highest hope that you, the reader, will find it a useful guide as you continue your journey along the path of self-discovery and personal growth.
